BEST-EVER FRIED CHICKEN
Active Time: 40 minutes
Total Time: 2 hours 40 minutes
INGREDIENTS
1 cut-up broiler-fryer chicken (about 3-1⁄2 lb)
1-1⁄2 cups buttermilk
3⁄4 cup flour
1-1⁄2 tsp salt
1⁄2 tsp each pepper and dried thyme
3 cups oil for frying (see Note)
PREPARATION
1. Put chicken and buttermilk in a large ziptop bag, seal and refrigerate 2 to 24 hours, turning bag occasionally.
2. Drain chicken in a colander; discard buttermilk. Don’t pat chicken dry.
3. In a clean plastic bag, combine flour, salt, pepper and thyme. Add several pieces chicken, seal bag and shake to coat well. Remove chicken to a plate. Repeat with remaining chicken.
4. Heat oil in 1 large or 2 medium-size heavy skillets over medium heat until hot but not smoking. Add chicken, cover and cook, turning occasionally with tongs, 20 minutes, reducing heat slightly if chicken begins to brown. Uncover, increase heat to medium-high and cook, turning often, 10 minutes or until chicken is golden and cooked through. Drain on paper towels.
Note: Leftover oil may be strained through a strainer lined with a paper towel or a coffee filter and used once more for cooking.

In the months leading up to Super Bowl XLIII, there has been much talk about large corporations backing out of spending millions of dollars on Super Bowl commercials due to the economic climate. This isn’t the case for all businesses, however. The popular ads shown during the big game come in just 30-second snippets, but are always popular due to the number of viewers taking in the game. NBC is selling approximately 67 time slots at up to $3 million each, depending on when in the broadcast the commercial is aired. Major companies not advertising this year include General Motors and FedEx, but Coca-Cola, Pepsi, Anheuser-Busch, Monster.com, General Electric, and GoDaddy.com are all on board.

Super Bowl XVIII: Raiders 38, Redskins 9
In Adrian Hasenmayer's continuing series of Super Bowl rankings, these are the games from Super Sundays that we wish would be erased from existence. Washington entered this game as solid favorites, understandable considering their league-best 14-2 record and since the 'Skins had already beaten the Raiders once in the regular season. But it was quickly apparent that they would not repeat the feat. The Raiders blocked a punt for a first-quarter TD as it got a lead it would never relinquish. The crusher came with only seven seconds left in the first half, when deep in its territory Washington did not run out the clock, instead throwing a screen pass that Raiders LB Jack Squirek picked off at the five and trotted in for essentially a game-clinching touchdown. The Raiders' 38-9 win set then-Super Bowl records with most points scored and biggest margin of victory.

In the lush history of the National Football League, there is plenty of competition in the category of "best teams." Adrian Hasenmayer digs into some of the NFL's dynasties and tackles the list of the best Super Bowl teams ever. This pick will generate some (ahem) feedback. On one hand, these Patriots lost the friggin' Super Bowl ... how could they be on this list? On the flip side, they were one wildly shocking, improbable, stunning, stupefying, (insert further adjectives here) David Tyree catch with his helmet on a desperate heave from QB Eli Manning from likely finishing what would have been a 14-10 Super Bowl win. The Giants deserved to win the game, of course, but in the modern day game with parity built into the product, the Patriots were THATCLOSE to a 19-0 season.
